How to Set a Table

Set the table early. With precision. Unfurl the tablecloth. Release its starchy scent into the morning air. Run your hands over it. Take care that the cutlery is polished to a fine shine. Check the place mats for smudges. They are immaculate but wipe them over just in case before setting down the china plate. God forbid there be even a speck of dirt.  

Fork to the left of the plate, knife to the right, blade pointing inwards because outwards would be rude. Place the soup spoon, because there is always soup, even in summer, to the right of the knife. The dessert spoon and fork face left and should be set above the plate, but not too close because people move their plates when eating. The wine glass, delicate and long-stemmed, goes to the right, and after that the tumbler for cold drinks. The napkin, matching the tablecloth, should be folded into a neat triangle and fixed under the fork.

For special occasions, fold the napkin into a lily and sit it in the center of the plate. This will be a nice touch that your dinner guests will appreciate.

Step back and survey your dinner table waiting quietly, obediently, for the guests to arrive. Be ready at least fifteen minutes before the appointed time. Laugh when they arrive, fashionably late, and tell them it was no bother at all. This is how you were brought up and you do this all the time, you really do.

Everything Can Be Used Again

There is a place for everything. Being caught in need of an item that you once had in your possession, but let slip away, is shameful.

Gumbands, cracked, mismatched Tupperware lids, and pantyhose with runs. There is a place for all of it. Store it neatly in dusty shoe boxes along the back basement wall, or under the bed. Shove it in corners, under the bureau, in the backs of closets, where the records used to go in the stereo cabinet and under the couch.

When the grandkids and grandnieces are little, they will love to play with the unmatched Tupperware in opaque blues, greens and pinks. They will sit happily on the floor and smack them together or stack them in untidy towers and laugh when they topple over. You laugh, too. When the kids get older, they use them as frisbees. Send them outside. Outside! Get out of my kitchen!

Plastic shopping bags crackle out of every nook and cranny, making a soft static sound in the breeze. Hide the bags when your daughter comes to visit. She will only throw them away. When she is gone, you forget where you hid them and start again. You never know when you will need a plastic shopping bag. With them, you can send the nieces home with squishy, over-ripe fruit (There was a sale!), or pop one over your perm in the rain, if you don’t have your plastic babushka with you. But you always have the plastic babushka with you.

Macaroni and Tomato

“It’s so simple. Just cook some macaroni and pour in some tomatoes.”

Mama’s verbal instructions were simple. But there were so many variations.

Method 1: Combine cooked macaroni noodles with a jar of home-canned tomatoes. Talk to your little girl about when we all drove up to Aunt Char’s farm, and picked and canned them. Sit down at the table to eat with her. Tell her a story, or sing her a song when you’re done.

Method 2: Combine noodles and home-canned tomatoes as above. Call for your daughter to come to the kitchen and eat. She stays so busy now. Be gracious and understanding when she rushes off after eating to go spend time with her friends.

Method 3: Heat up a bowl of the macaroni and tomato you made the previous night in anticipation of your daughter coming home for the weekend. Listen while she tells you everything about college. Smile and keep it to yourself that you know she isn’t telling you everything.

Method 4: Use a store bought can of tomatoes because it has been many years since you could pick and can your own. Hold your new granddaughter in your arms while her mother eats a bowl of the best food in the world.

Method 5: Hold your daughter’s hand while she reminisces with you about how she always loved your macaroni and tomato. Laugh about what a simple thing that was. Smile and squeeze her hand a little tighter when she sheds a tear and tells you it is her favorite food in the world.

How to Have Nice Things

To protect yourself, have Nice Things. With Nice Things you can build a wall of cobalt glass, pink carpet, tiny souvenir spoons. Raise this wall between yourself and Poverty, the Dust Bowl, the Capital-N-Nothing of your childhood.

When your daughter (who does not need Nice Things to protect her; you have protected her) comes for stories with her secondhand recorder, you need not speak of the Nothing. It is walled out.

You eat dust and Nothing, but someday you will have a pink carpet. Vacuum it each time you have visitors, in two-foot strokes against the grain and then across. Repeat this before and after your visitors come; the carpet is a Nice Thing.

Nice Things must be displayed at all times. If a Nice Thing breaks it becomes Nothing. You must never patch up a broken Nice Thing; always replace it with a new Nice Thing.

When you are angry you must not damage your Nice Things. When you need a weapon, use your hands, your fingernails, the family dachshund but not the cobalt glass. Go mad in the uncarpeted bathroom with the white glass case that holds your dusting-powder. The scent is called Chantilly Lace.

Take your grandchildren antiquing. Try to explain the difference between things and Nice Things; their mother will not. Her carpet is brown and threadbare. She fears nothing- not Nothing.

Your youngest granddaughter is fearless. She breaks Nice Things without caring that the Nothing comes in. Her elder sister tries to repair broken Nice Things. You need not explain that it is too late. She will discover this on her own. The last time you see her, tell her you are proud of her. That her life, her accomplishments, are a Nice Thing. It will be the only time you understand each other.

Before you die, make sure your granddaughters have tiny spoons.

Turn Left

His patterns linger in the grass.

The first edge always carved straight down the double hill, along the side of the driveway. As soon as the span of a single blade was all that remained along the front of the lawn, we would turn left ninety degrees, running hard along the stone wall over which we jumped our toboggans in the winter, frozen butts jolting off the road below as we remembered too late to check for cars.

 “It’s a communist plot,” he’d shout over the engine as he made that first uphill turn, pushing hard against gravity. A sudden eruption of sweat would appear through his white shirt: a smiley face on his chest, though he was rarely smiling on this stretch.

Pinecones, small wildlife, and other trespassers from the undeveloped land in between yards forced me to run ahead and pull away interloping obstacles before they found the mower. Even when I missed them, he always saw the toads, and we carried them away to safety.

Finally, atop the hill, another left-turn, flush to the hedges in front of the living room. Gram sat on the davenport shouting something nobody heard, we kept our slow progress.

Left, and left again, the spiral bloomed in the lawn. Later, I would run laps in its lanes having long forgotten the trudging and complaining I did in carving them.

As I ran, he’d go in and watch NASCAR, in later years under a blanket despite the heat, always thinner. Always turning left.

Bitter Gourd Over a Low Flame

She will teach you to cook bitter gourd even if you yourself hate the vegetable. “We do such things for love,” she says, “learning a dish is nothing.”

            Before she slices the korolla, the bitter gourd, as thinly as possible, admire the bright green, ridged outer skin. Like a palm-size crocodile it sleeps in her hand. Remember to scoop out the seeds earlier if they’ve begun to harden. The younger, the softer, the better.

            Salt the korolla rounds, and let them sit. If you let the slices sit quietly, the bitterness will drain. While you wait, keep busy. Talk about love. You do not yet know, and she never will, that you will learn not only to swallow bitterness but to hold it in your mouth and smile. Chop up onions and lots of garlic.

            Once the korolla releases liquid, wash thoroughly. Rub with turmeric powder. Heat cooking oil (mustard oil is best), and fry whole cumin until it sputters. Add the onions and garlic. When they’re translucent, add dried red chili. Throw in the korolla. Add salt if you need. Do not cover. Let it cook on medium heat. The longer you leave it the crispier.

            Place a slice on your tongue. If you still don’t like it, spit it out. Some tongues are not meant for bitter. Remember: no matter how many times you wash and no matter how long you salt it, some bitterness will remain. Who can change, through mere cleansing, the essence of a thing?

For Mary Lou: How to Care for a Troubled Household

1.  Put on your shirtdress, knee-high hose and loafers. Cover your head with a plastic rain bonnet. The bus ride from your home to theirs is long.

2.  Upon arriving, shoo the cats out of the house. The five-year-old girl will tug at your dress; keep her behind you, casually checking each room to make sure the mother hasn’t committed suicide.

3.  Teach the girl to tie her shoes. Tell the bunny story. Yes, that one: make a rabbit ear, chase it around the tree, dive into the hole.

4.  Unfold the ironing board. Sprinkle the father’s shirts with water, roll them up. Unroll and iron. You and the little girl sing with the Supremes on the radio; the iron cackles and spits.

5.  Sweep, wash the windows, do dishes, dust, wax.

6.  If the father has disappeared, you are in charge. The mother is locked in her room; children must be fed. You won’t get paid for the extra hours, but Lord Jesus will know.

7.  Keep an eye on the eldest son, the one who has brain troubles. If he is outdoors alone, holler out the back porch, ring the triangle. Bullies are in the fields, waiting.

8.  Count the children; there should be five. Start them on homework; put the little one to bed.

9.  Take the bus home to your lonely son and liquored husband.

10.  Sing “Try Me One More Time” in your sleep. Angels hover and kiss your temples. You are loved.

CAFE CON LECHE

Fill a saucepan with cold water.  

Place on a medium flame, and spoon in Bustelo.

I can’t say how much. They never measured. They just knew. I just know. I ought to: I watched my mother and grandmother do this every day of my childhood, and beyond. 

When you have spooned out enough, begin to gently stir. You want all of the coffee grounds to become drenched.  

Do not look away. It takes only a moment for this to boil over and leave you with no coffee to drink. Que pena.

You will see the crema form a moment before the liquid starts to rise. The very second you see the rising water - rich and brown like beautiful mud - turn off the flame and pull the saucepan off the stove.

With one hand, hold the saucepan full of hot water and coffee grounds. With the other, hold the coffee sock high, over a second, empty saucepan.

Pour the liquid into the sock. Slowly, so that the coffee has time to drip through the muslin. Too fast, and it will overflow. Otra pena. 

When most of the coffee has dripped through, let the coffee sock, full of wet grounds, rest in a mason jar. A bit more coffee will drip out over time, and this will capture it.

Take the saucepan with the coffee and top off a mug that is ⅔ full of boiled milk.  

Two sugars. It tastes like every single thing I remember. Brujeria sagrada.

Sunday Biscuits

Winter mornings when frost etched my bedroom window and icicles dangled outside, I snuggled under my thick warm blankets waiting for the call to get ready for school.  But on Sunday mornings, the whispered songs of women longing for love, playing on mamma's stereo, nudged me from my child’s dream. 


Awake, I’d slip from my bed and wander into the living room. It was warm from the kitchen where the biscuits mamma made every Sunday were baking. Sometimes I’d get up in time to catch her sifting the dry ingredients made of flour, baking powder, and salt then shaping them into a volcano-like funnel in which she blended with her hands the Crisco, and next stirred the right amount of buttermilk to the dough. Then she’d roll the dough out on a floured board and cut out the biscuits using a tea-cup. Her biscuits puffy light and delicately flavored.

I’m sitting here in my home sipping coffee waiting for my biscuits to bake. I’ve modernized her recipe: Sunflower seed oil—a healthy substitute for Crisco, and yogurt—because it’s easy to find in stores—for the buttermilk.  These moist ingredients lead to a drop biscuit. It’s not as magical and less work. But the biscuits are puffy and it approximates the flavor I remember. On the radio, Sunday’s Jazz DJ celebrates Billie Holiday’s birthday and plays three versions of “Fine and Mellow.” I am mother and child.

     Remain unmarried.  Instead of a partner and children, approximately twenty-two tumbleweeding, mewling, hissing balls of fur should inhabit your home.

     Your loving, generous nature should consistently drive your desire to rescue just one more lost soul from the mean streets.

     Vegetarian you, should purchase fish for feeding your furry charges.

     Cats treasure tea.  They take their afternoon tea, with plenty of milk and sugar, in saucers laid around the dining room floor.  Use only your best china for this purpose.

     When sauntering past a furry friend engaged in a battle of howls with another, casually lean forward, pluck your friend from the ground by the scruff of its neck, and arrange it over your shoulder like a fox-fur stole.  Your friend will immediately go limp and be compliant.

     Entwine your psyche with the psyches of your housemates so they become your familiars.  Move in synch with them, adjusting your emotional cycles to theirs until you achieve a harmonious commune of cats.

     Every spare second of your waking day should be spent thinking about the welfare of these creatures, closer to you than even your family members.  These are the children you never had, the confidants you yearn for, the companions of your dotage.  You may be "small mother" to your nieces and nephews, but you’re the only mother to your feline friends.

     You should blithely ignore all pleas and proddings from human family to limit the number of creatures on hygiene grounds.  You know better.  You always have.

Abuelo: How to Houseguest

To his credit, he didn’t do it often, but when he did houseguest Abuelo did it his way. As he did all things.

You knew he was there by the pile of newspapers tossed on the couch. Or by the TV blaring Univision or wrestling. How he ever found these stations with my dad’s inability to rig our cable without the use of less than three remotes was a minor miracle and a testament a general competence that sprung into action only when he was alone and unable to demand service.

He would sometimes spend a good hour in the bathroom. And while the fan inside blared and the rustle of even more newspapers came from under the door, he would always know if you’d change the channel or turn off the TV. God forbid. The yelling.

Abuelo came from a place of IDGAF and it’s only a place I can now find charming. When you are 14 and there is an old man spread on your couch, wearing black knee socks and sandals, a crisp white tank top and shorts (even in winter) it only gives you further cause to hide in your bedroom you’ve designed to look like the studio apartment you wish you lived in.

The world was his. And so was everyone’s house.

Evergreen

The pine-scented candles go on sale right after Christmas, and that is when you make your move. It always smells like Christmas at your house. Leaving the candles out all year is your version of never taking the tree and lights down. And pine scent is what you love most about Christmas.

Buy as many as you can carry out of the store. Buy as many different kinds as they have: glass jars, tea lights, giant pillars with pinecones imbedded in them, giant blocks with four wicks. Haunt the sale aisle all year long, just in case.

Every surface in your house should have a candle on it. When they are spent, burned down to residue and charred glass, don’t throw them out. The jars or stubby candle rinds will still give off a faint pine scent. Just place another one next to the husk. There will be about 25 in each room of your small apartment. Light them all at once, just a few for mood, or gaze at their lovely un-lit greenness. Inhale deeply.

They will grow a fuzzy layer of dust. It will burn off when the candle is finally lit, or it will just sit like a sweater on the candle rind. Keep the extra candles in the coat closet on a shelf. Opening the closet door will be the best part of your morning. Your jackets, scarfs, hats and gloves will always smell of pine. This smell will cling to you and remind all of your friends and family of you, long after you are gone.

How Does Your Garden Grow

How to nurture blowsy summer roses:

You will need your retirement years to do this right.

            This is because you will have a garden only after toiling at your school administration job for thirty five years, after paying your mortgage in hiccupping installments.

            By then you have mornings and late afternoons free to prudently crack open the soil and knead the earth, letting in just enough air for the roots. Not so much that the top crust washes off with the first summer rains. The scent of earth and rainwater shouldn’t be a warning.

            Your granddaughter has her uses. Get her a watering can right for her size; a real one would be as tall as she is. Sternly direct her to drizzle lightly over the slippery dark green leaves before breakfast.  Order her to stay out of the midday sun. Be resigned when she doesn’t.

            The secret is the timely application of fresh manure. Press some onto the dead heads in neat small handfuls. Spread the rest in the flower beds. Wave the plastic bag of compact cowpats at your granddaughter, and let the smell leak into her nostrils. Smirk when telling her what it is. Inform her that there are people who drink urine for good health.

            The birth of new buds is slow. The blooming, slow, slow, slow. Then in two days a sudden burst: your extravagant roses spill over with fragrance, their velvety petals flutter in tender flirtation with the breeze.

            Then, the flippant petals fall away; the roses, in threes and twos, sag.

            It will then be time for your granddaughter to leave the garden. It will soon be time for you.

Aglio e Olio (Con Cipolla)

He often cooked shirtless and I would pay attention to the muscles in his back tensing and rippling as he worked. 

He poured olive oil into a saucepan—not a frying pan as I would have done—and let it heat up while he chopped garlic cloves and then diced an onion into tiny perfect cubes. He filled another pot with water and salted it generously. 

The kitchen filled with the smell of garlic and onion sautéing in olive oil, which is in all the world the most enticing aroma when it is late and you are hungry. Sometimes I’d come and stand behind him for a moment, my arms reaching around him to touch fingertips at his belly, my cheek against his shoulder, absorbing the reverberations of his movements.

He drained the spaghetti and poured it into the saucepan with the translucent garlic and onions. Salt, pepper, grated Parmiggiano. There: a meal.

I make that simple dish of his from time to time, but I can't ever do it with my shirt off. On my arm, as I type, I can see the dark pink and brown mark, where, yesterday when I dropped a sole into the frying pan for my children’s dinner, the butter splashed out and scalded me. He was much more methodical, though, practically undistractable, even with my cheek against his back. He cooked and I observed and he never got burned.

How to Properly Dry and Fold Cloth Diapers: A Tutorial in Several Steps

Be a nine-year-old girl in the 50’s with a new baby sister and a mama with a clothesline that stretches the length of the yard.  There’s a pole to make the line taller, you have to have that pole because if you don’t the line will hang low from the weight of the wet clothes which will drag in the dirt.

Keep the wooden clothespins in a handmade bag that you will never leave outside for fear of bees nesting inside or birds shitting on the pins. 

The basket will be huge and very heavy and your mama will carry it.

Hang the Birdseye diapers together.  (All items must always be hung with like items.)  

What’s a Birdseye diaper?

Oh, the one with the straight edges. 

Why do some have rickrack edges and are longer? 

Just made that way.

Use separate pins for quick drying, hang side by side as the laundry has to flow.

Bring inside for folding.  No clean laundry will ever sit in a basket even though in the future laundry will sit in baskets for days and sometimes weeks, even though there will be entire generations born who do nothing but move clean clothing unfolded from basket directly onto waiting children, for now the laundry will be folded.

Stand up, stand up

I yell at my husband for doing it.

Nag at him in the same way she nagged so many people about so many things that it is now the genetic marker against which many of us are measured.

“You are your grandmother’s grandson,” I am told.

 “Sit down when you’re eating,” I reprimand. “A Canadian study showed that people who ate while standing consumed 30 percent more calories than people who were sitting.”1

But then he’ll come into the kitchen, and there I will be. Standing over the sink and eating my lunch, looking out the window as she did. My mind a million miles from where I am, remembering her standing in her housecoat at the sink, looking out the window, smoking a cigarette, her Black Russian sweating large beads on the kitchen table, her mind a million miles from where she stood.

“Eat that over the sink,” she would say, returning to her chair as General Hospital returned from commercial.

Yes. If you stand while you eat, studies have shown that you are likely to consume 30 percent more calories than the sitters. 

But, if you stand and eat over the sink, there are no dishes to do. You’ll drop no crumbs on your clean kitchen floor. You will not need to wipe down the table when you are finished.

Sleeping Bags for Two or One

Few people know the proper technique for using sleeping bags. I learned how at an early age. Once you learn, you don’t forget.

You’ll need two sleeping bags, and a best friend. If you don’t have a best friend, I feel sorry for you because best friends are magic. Find one who is kind, likes the same things you do, and has asthma so they’ll stay behind with you to play pretend and tell stories, when the other kids run off to play sports. Go everywhere and do everything together. So that if your best friend died, and someone made a collage for her funeral, they wouldn’t find a single photo of her that didn’t have you in it.

But let’s not get ahead of ourselves.

Open both sleeping bags all the way. Place one on the ground. Place yourself and your best friend on top. Cover yourselves with the second. Cuddle and whisper all night. Bite each other’s shoulders as a joke. Giggle, but quietly, because your babysitter is mean when she’s sleepy. Hold on to your best friend very tight. Because she’s magic, and has great ideas about sleeping bags. And because she’s Black, and lives in a poor neighborhood. So if her asthma ever gets too bad, and the ambulance won’t come to her “dangerous” neighborhood, and she’s brain dead by the time her mother drives her to the hospital, and nobody has the courage to tell you what brain dead means, and you write letters and poems and drawings that nobody will tell you she can’t read, and when they finally tell, you climb into your sleeping bag and pretend to be dead as hard as you can, but no matter how hard you try, you can’t cry yourself to death and join her. That, they’ll tell you. So hold on tight.

Maybe if you hold on tighter.  Maybe if you zip the sleeping bags together. Maybe if you spend the rest of your life shouting about injustice, ambulances will show up at little girls’ houses when they’re called.

Making a Party Playlist

It can't be one of your favorites. You'll just get mad when they talk over the music. 

Put the records in order at the front of your rack. If someone wants to feel useful by queuing up the next one, let him. When he flips through the back sections, reach in and pull one out. Have you heard this? The trumpet player's the same as here. Waggle a finger at the turntable. Smile. Offer to accompany the helper to find a refreshment.  

The B sides will be slower. That's good. Let a particularly slow B side lead into another B side, not an A. Make sure nobody's yawning or sighing. 

Prop up the jacket; lean it against the turntable's lid, and watch for when people linger to read it. Sometimes, when someone needs a pal, the record player's their parking spot.

A familiar song or three spread out over the evening is nice. It gets them talking: I didn't know they did this one, too! Is this the same group? But any more and it's a singalong. That kills the conversation. The music is not a guest. 

When it's time to put out the coffee, the music will tell you so. Send people off feeling warm, but don't let the record make invitations for you.
